Our specialities are made with respect for taste and tradition, using regional raw materials wherever possible – our 100% NATURAL recipes have remained unchanged since the early 60s, with no additives, colorants or preservatives. AZAIS-POLITO didn’t go with the trend, it was the trend that came to “Elle”, perhaps proving that the guidelines set by the two co-founders were the right ones…
Azais-Polito is a French manufacturer that has been promoting local CONSUMPTION for almost 60 years, well ahead of the trend. In this respect, the Sétoise cannery is the largest “historical” buyer of rock fish from the 3 auctions in the Gulf of Lion – zone FAO.037.1 – which means that, since its creation in 1963, it has sourced its supplies exclusively from its own fishing industry, long before institutional or industry brands took an interest …

At every stage of the production process, the company’s attachment to the terroir and its inventive curiosity, technical subtlety and innovative spirit are constantly present. The products are not manufactured, but “cooked”, going through the same essential cooking stages as home-made products: browning, sweating, simmering and even skimming with a hand ladle when the original recipe calls for it… AZAIS-POLITO’s commitment to consistency and transparency for the consumer means that it innovates by building on its traditions and drawing on its own roots.

The company also ensures perfect traceability upstream and downstream of the products it manufactures. Through its Commitment, the management of the Conserverie has ensured consumer safety by implementing an HACCP SYSTEM since 1997 to meet the requirements of European Directive 93/43 EEC and legislation specific to its field of activity: the Canning Industry (Orders of 28/12/1992-09/05/1995 and N°60-1524 of 30/12/1960). This has enabled 10 of its products to receive the “Sud de France” label.
