At AZAIS-POLITO, we’ve been canning the emblematic Sète octopus for as long as we can remember. We’ve been working it in all its forms: in salads, in tielle fillings, in marinades, in rillettes – long before it became popular to eat it as we do today.
The distinctive features of this new range are, firstly, its singular name of “pouffre”, never before used in the French canning market, and, secondly, its innovative presentation. In fact, the 450 ml jars contain a “Pouffre de roc entier cuit en rosace”, which makes up 60% of the recipe, making it a unique quality product on the French market.
In Sète, among fishermen’s families and in popular Sétoise cuisine, the “Poulpe de Roc” (octopus), the emblem of the singular island, is familiarly called “Pouffre”. It was therefore essential for us to respect our Sète traditions by naming our range “Le Pouffre”.
