AZAÏS-POLITO, thanks to its original personalities, has opened up the market for Sétoise and regional specialties, while preserving the heritage of the past. She was the first to package products from the Sétoise culinary tradition in metal tins, then a few years later in glass jars.
It was only over a period of fifteen years, in a natural and logical sequence, finding the inspiration for creation only in her own roots, that she extended her range of Sétoise Specialties to Regional Specialties. AZAIS-POLITO’s commitment to innovation, while never forgetting Tradition and Quality, will have the privilege of canning the following specialties for the first time on the French market:

  • 1963: First canning of Roche à la Sétoise fish soup on the French market, using the traditional Sétoise recipe.
  • 1665: The first Rouille Sétoise with fresh eggs and pure saffron is canned on the French market according to the traditional recipe to accompany our Fish Soup.
  • 1970: First canning on the French market of the famous Moules et Encornets stuffed à la Sétoise according to the “traditional” recipe of our Grandma Finette.
  • 1980: First canning on the French market of Salades de fruits de Mer and Petits Poulpes en Marinade, which we are still the only ones to produce in oil and vinegar, naturally, without additives and with a long “best before” date.
  • 2000: First canning of a range of Escargot de Mer en court Bouillon, AZAIS-POLITO is still the first cannery to distribute a range of canned sea snails on the French market.


Today, we offer a rich, colorful and flavorful range of products, from fish soups and shellfish soups to ready-made meals and fish sauces, and over forty delicious seafood specialties in three ranges, adapted to different distribution networks: delicatessens, traditional retailers, caterers, regional supermarket chains, works councils…
