This “AZAIS-POLITO EXCLUSIVE” culinary preparation is cooked according to our know-how to recover and exalt the juices of your whole or filleted fish, shellfish and/or crustaceans, while retaining their predominant sapidity. With this device, 2 times diluted, you can make all your Bouillabaisses, Cassolettes de la Mer, Marmites du Pêcheur, or other fish-based dishes requiring a SHORT BOIL as a base, by poaching your fish in it for just a few minutes. EXCELLENT also as a FOND for Paëlla and/or Fidëua to cook rice or fine pasta while diffusing flavors and spices according to Mediterranean tradition.
